30 Minute Ground Turkey Teriyaki

Ingredients
  

Stir Fry
  • 1 lb ground turkey 93% lean
  • 1 tbsp vegetable oil
  • 1 head broccoli cut into florets
  • 1 cup carrots shredded or matchsticks
  • 2 stalks green onions chopped
Teriyaki Sauce
  • 0.5 cup soy sauce low sodium
  • 0.25 cup water
  • 0.25 cup brown sugar packed
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp fresh ginger grated
  • 2 cloves garlic minced
  • 1 tbsp cornstarch mixed with 1 tbsp water

Equipment

  • Large skillet or wok
  • Rice cooker or pot
  • Whisk
  • Small bowl

Method
 

  1. Cook rice according to package directions.
  2. In a small bowl, whisk together soy sauce, water, brown sugar, rice vinegar, sesame oil, ginger, and garlic.
  3. Heat oil in a large skillet over medium-high heat. Add ground turkey and cook until browned, breaking it up with a spoon.
  4. Add broccoli and carrots to the skillet. Add a splash of water, cover, and steam for 2-3 minutes until veggies are tender-crisp.
  5. Pour the sauce mixture over the turkey and vegetables. Stir to combine.
  6. Stir in the cornstarch slurry and simmer for 1 minute until the sauce thickens and becomes glossy.
  7. Serve over hot rice, garnished with green onions and sesame seeds.

Notes

Substitute ground chicken or beef if desired.
