Ingredients
  

Chicken & Marinade
  • 1.5 lbs boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp lemon juice fresh
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 0.5 tsp kosher salt
  • 0.5 tsp black pepper
Bowl Base
  • 4 ears sweet corn husked
  • 0.5 red onion finely diced
  • 0.5 cup feta cheese crumbled
  • 0.33 cup fresh basil chopped
  • 0.25 cup fresh parsley chopped
Dressing
  • 0.33 cup Greek yogurt plain
  • 2 tbsp mayonnaise optional
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic minced

Equipment

Method
 

  1. Whisk olive oil, lemon juice, garlic powder, paprika, salt, and pepper. Toss chicken breasts in the marinade and let sit for 15 minutes.
  2. Preheat grill to medium-high. Grill chicken for 6-8 minutes per side until internal temperature reaches 165°F. Rest for 10 minutes, then dice.
  3. Place husked corn directly on the grill. Turn occasionally until charred on all sides, about 10 minutes. Let cool, then slice kernels off the cob.
  4. In a small bowl, whisk together Greek yogurt, mayonnaise, vinegar, Dijon mustard, and minced garlic to make the dressing.
  5. In a large bowl, combine diced chicken, charred corn kernels, diced red onion, feta cheese, and fresh herbs.
  6. Pour dressing over the bowl contents and toss thoroughly to combine. Divide into four meal prep containers.

Notes

Store in airtight containers in the refrigerator for up to 4 days. Can be eaten cold or slightly warmed.
