- Wash and chop all chosen vegetables into uniform sizes.
- Heat 1 tbsp olive oil in a large skillet or wok over medium-high heat.
- Add harder vegetables (e.g., broccoli, carrots, onions, bell peppers) to the skillet. Sauté for 3-5 minutes, stirring occasionally, until tender-crisp and lightly caramelized.
- Add softer vegetables (e.g., mushrooms, zucchini, green beans) and minced garlic. Sauté for another 3-4 minutes, stirring frequently, until garlic is fragrant and vegetables are tender-crisp. (If using spinach/kale, add in the next step).
- Sprinkle Italian seasoning, salt, and black pepper over the vegetables. Toss to combine. If using spinach or kale, add now and cook for 1-2 minutes until wilted.
- Taste and adjust seasoning as needed. Squeeze fresh lemon juice over the top for brightness, if desired.
- Serve immediately while hot and vibrant.
Notes
Do not overcrowd the pan; cook in batches if necessary to ensure vegetables sauté, not steam. Cut vegetables to a uniform size for even cooking. Adjust cooking times based on vegetable density.
