Ahi Tuna Tartare Wonton Tacos

Ingredients
  

Wonton Shells
  • 12 pieces Wonton Wrappers square or round
  • 2 cups Frying Oil canola, vegetable, or peanut oil (if frying)
Tuna Tartare
  • 3/4 lb Sushi-Grade Ahi Tuna very fresh, kept cold
  • 2 tbsp Soy Sauce or tamari
  • 1 tbsp Toasted Sesame Oil
  • 1 tsp Rice Vinegar unseasoned
  • 1/2 tsp Fresh Ginger finely grated
  • 1 tsp Sriracha adjust to taste for heat
Assembly & Garnish
  • 1 large Avocado ripe but firm, sliced
  • 2 stalks Green Onions (Scallions) finely sliced
  • 1 tbsp Sesame Seeds mix of black and white, toasted
  • 1 slice Red Onion very thinly sliced into slivers (optional)

Equipment

  • Deep skillet or Dutch oven (if frying)
  • Metal tongs
  • Sharp Chef's Knife
  • Mixing bowls

Method
 

  1. Prepare the shells (Frying method): Heat 2 inches of oil in a deep skillet to 350°F (175°C). Drop a wonton wrapper into the oil and immediately use metal tongs to fold it in half, holding the edges apart to form a taco shape. Fry for 10-15 seconds until golden and crispy. Drain on a wire rack or paper towels. Repeat for all wrappers.
  2. Using a very sharp knife, finely dice the cold sushi-grade Ahi tuna into 1/4-inch to 1/3-inch uniform cubes. Place in a medium bowl.
  3. In a small bowl, whisk together the soy sauce, toasted sesame oil, rice vinegar, grated ginger, and sriracha.
  4. Pour the marinade over the diced tuna. Add half of the sliced green onions and half of the sesame seeds. Gently toss to combine and coat the fish evenly. Do not let it sit in the marinade for more than 10 minutes.
  5. To assemble, place a slice or two of avocado into each crispy wonton shell. Spoon the marinated tuna tartare generously on top of the avocado.
  6. Garnish the tacos with the remaining green onions, sesame seeds, and optional red onion slivers.
  7. Serve immediately to ensure the wonton shells remain perfectly crispy.

Notes

It is critical to use high-quality, sushi-grade tuna for this recipe since it is served raw. Keep the fish refrigerated until the absolute last moment before dicing and mixing.
