Air Fryer Salmon Tacos with Slaw

Ingredients
  

Salmon
  • 1 lb salmon fillets skin removed
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 0.5 tsp ground cumin
  • 0.5 tsp garlic powder
  • 1 tsp brown sugar optional
Slaw
  • 3 cups coleslaw mix cabbage and carrots
  • 0.25 cup red onion thinly sliced
  • 0.33 cup Greek yogurt or mayonnaise
  • 1 tbsp lime juice fresh
  • 1 tsp apple cider vinegar
Assembly
  • 8 small corn tortillas warmed/charred
  • 0.25 cup cotija cheese crumbled
  • 0.25 cup cilantro chopped

Method
 

  1. Preheat air fryer to 400°F (200°C).
  2. In a small bowl, mix chili powder, paprika, cumin, garlic powder, brown sugar, salt, and pepper.
  3. Rub salmon fillets with olive oil and coat generously with the spice mix.
  4. Place salmon in air fryer basket. Cook for 7-10 minutes until flaky and cooked through (145°F internal).
  5. While salmon cooks, whisk together yogurt, lime juice, vinegar, and honey in a bowl. Toss with coleslaw mix and red onion.
  6. Warm tortillas over a gas flame or in a skillet to char slightly.
  7. Flake the cooked salmon into large chunks. Assemble tacos by placing salmon on tortillas, topping with slaw, cotija cheese, and cilantro.

Notes

Do not overcrowd the air fryer basket. Cook in batches if necessary.
