Ingredients
  

Pancake Batter
  • 1.5 cups oats rolled or quick
  • 0.5 cup applesauce unsweetened
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 0.5 cup milk dairy or plant-based
  • 1 tbsp maple syrup optional

Equipment

  • Blender or Food Processor
  • Non-stick skillet or griddle
  • Spatula

Method
 

  1. Place the oats in a blender and blend until they turn into a fine flour-like powder.
  2. Add the applesauce, baking powder, vanilla extract, milk, and maple syrup to the blender with the oat flour.
  3. Blend all ingredients until a smooth batter forms. Let the batter sit for 5 minutes to thicken.
  4. Heat a non-stick skillet over medium-low heat and lightly grease it.
  5. Pour small amounts of batter (about 1.5 to 2 tablespoons each) onto the skillet to form mini pancakes.
  6. Cook until edges appear dry and bubbles form (2-3 minutes). Flip carefully and cook for another 1-2 minutes until golden brown.
  7. Allow to cool significantly before serving to babies or toddlers.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days, or freeze flat on a baking sheet before transferring to a freezer bag for up to 3 months.
