Method
- Pound steak slices until 1/4 inch thick. Season with salt and pepper.
- Mix breadcrumbs, cheese, parsley, minced garlic, and olive oil to create the filling.
- Spread filling on meat, roll tightly, and secure with kitchen twine.
- Sear rolls in hot oil in a Dutch oven until browned on all sides. Remove meat.
- Sauté onion in the same pot, add garlic/tomato paste, and deglaze with red wine.
- Add crushed tomatoes and basil. Return beef to pot. Cover and simmer on low for 1.5 - 2 hours.
- Remove twine, slice rolls to show spirals, and serve topped with sauce.
Notes
If the sauce becomes too thick during the long cook time, add a splash of beef broth or water.
