Ingredients
  

The Salmon
  • 4 fillets salmon 6oz each
  • 2 tbsp olive oil
  • 3 tbsp Cajun seasoning
The Sauce
  • 2 large avocados ripe
  • 2 large limes juiced
  • 0.5 cup cilantro fresh
  • 1 clove garlic
  • 2-4 tbsp water to thin sauce
  • 1 pinch salt and pepper

Equipment

  • Baking sheet
  • Food processor or blender

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Rub salmon fillets with olive oil and coat evenly with Cajun seasoning.
  3. Bake for 12-15 minutes until salmon is cooked through and flakes easily.
  4. Meanwhile, combine avocado, lime juice, cilantro, garlic, salt, and pepper in a blender.
  5. Blend until smooth, adding water one tablespoon at a time until pourable.
  6. Serve salmon hot, drizzled generously with avocado lime sauce.

Notes

If you want a crispier crust on the salmon, broil for the last 1-2 minutes of cooking time.
