Method
- Preheat oven to 350°F (175°C). Grease a donut pan thoroughly with non-stick spray or butter.
- In a large bowl, whisk together flour, sugar, matcha powder, baking powder, and salt until uniform and no lumps remain.
- In a medium bowl, whisk buttermilk, eggs, melted butter, and vanilla extract until smooth.
- Pour wet ingredients into dry ingredients. Fold gently with a spatula just until combined. Do not overmix.
- Transfer batter to a piping bag or ziplock bag with the corner cut. Pipe into donut cavities, filling about 3/4 full.
- Bake for 10-12 minutes, or until the tops spring back when touched.
- Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
- Brush lightly with honey (if using), then top with chopped pistachios, dried cranberries, and a dusting of powdered sugar.
Notes
Best eaten the same day. Store in an airtight container for up to 2 days.
