Ingredients
  

Pears
  • 3 large Bosc or Anjou pears halved and cored
  • 1 tbsp lemon juice
  • 0.5 tsp cinnamon
Filling & Topping
  • 5 oz goat cheese soft log
  • 0.33 cup honey plus more for drizzling
  • 0.5 cup cranberries fresh or dried
  • 0.25 cup walnuts chopped (optional)
  • 3 sprigs fresh rosemary for garnish

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Halve pears and scoop out the cores. Brush cut sides with lemon juice.
  3. Place pears cut-side up in a baking dish. Drizzle with half the honey and sprinkle with cinnamon.
  4. Bake for 20-25 minutes until just tender.
  5. Remove from oven. Fill centers with goat cheese and top with cranberries.
  6. Drizzle with remaining honey and bake for another 10-15 minutes until cheese is soft.
  7. Serve warm, spooning pan juices over the fruit and garnishing with rosemary.

Notes

Serve with vanilla ice cream for dessert or a baguette for an appetizer.
