Ingredients
  

For the Sushi Rice
  • 1 cup short-grain sushi rice
  • 1.25 cups water
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 0.5 tsp salt
For the Baked Salmon
  • 1 lb salmon fillet skinless, boneless, cut into ½-inch cubes
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 0.25 tsp garlic powder
Assembly & Garnish
  • 6-8 sheets nori seaweed cut into squares
  • 0.5 cup mayonnaise Japanese mayo preferred
  • 2-3 tbsp sriracha adjust to taste
  • 1 tsp rice vinegar for spicy mayo
  • 2 green onions chopped
  • 2 tbsp sesame seeds toasted

Equipment

  • Muffin tin (standard 12-cup)
  • Baking sheet
  • Small saucepan (for rice vinegar mixture)
  • Large mixing bowl

Method
 

  1. Rinse sushi rice. Cook according to package directions. Season with rice vinegar, sugar, and salt mixture. Let cool.
  2. Preheat oven to 400°F (200°C). Toss salmon cubes with soy sauce, sesame oil, and garlic powder. Bake 10-12 minutes until cooked. Flake salmon.
  3. Lightly spray muffin tin. Press 2 nori squares into each cavity to form cups. Fill with sushi rice, then flaked salmon.
  4. Bake sushi bites for 8-10 minutes until nori is crispy.
  5. Whisk mayonnaise, sriracha, and rice vinegar for spicy mayo. Drizzle over baked bites.
  6. Garnish with chopped green onions and sesame seeds. Serve immediately.

Notes

Ensure nori is crispy; if needed, bake a few minutes longer. For extra flavor, add a small cube of avocado on top before garnishing.
