Ingredients
  

Salmon
  • 4 fillets salmon 6oz each, skin removed
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 0.5 tsp black pepper
Topping
  • 2 tbsp butter unsalted
  • 3 cloves garlic minced
  • 5 cups fresh spinach packed
  • 2 tbsp cream cheese softened
  • 1 cup mozzarella cheese shredded
  • 0.25 cup parmesan cheese grated

Method
 

  1. Preheat oven to 400°F (200°C). Lightly grease a 9x13 baking dish.
  2. Place salmon fillets in the dish. Drizzle with olive oil and lemon juice, then season with salt and pepper.
  3. In a skillet over medium heat, melt the butter. Sauté garlic for 30 seconds until fragrant.
  4. Add spinach to the skillet in batches, cooking until completely wilted. Drain any excess liquid.
  5. Stir the cream cheese into the hot spinach until melted and combined.
  6. Spoon the spinach mixture evenly over each salmon fillet.
  7. Combine mozzarella and parmesan cheeses, then sprinkle generously over the spinach.
  8. Bake for 12-15 minutes until salmon is cooked through and cheese is melted and bubbly. Broil for 1 minute if a browner top is desired.

Notes

Ensure spinach is well-drained to prevent the dish from becoming watery.
