Baked Sesame Garlic Tofu

Ingredients
  

Tofu & Coating
  • 1 block (14 oz) extra-firm or super-firm tofu
  • 1 tbsp cornstarch for coating tofu
  • 1 tbsp sesame seeds for garnish
  • 2 tbsp fresh parsley or cilantro chopped, for garnish
Sesame Garlic Glaze
  • 0.25 cup low-sodium soy sauce or tamari for GF
  • 1 tbsp toasted sesame oil
  • 2 tbsp brown sugar packed
  • 2 cloves garlic minced (about 1 tsp)
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch for thickening glaze
  • 2 tbsp water for cornstarch slurry

  • Tofu press (recommended) or heavy objects for pressing
  • Large bowl
  • Baking sheet

Method
 

  1. Press the tofu: Drain tofu, wrap in paper towels/towel, place on plate with a heavy object on top. Press for at least 30 minutes (up to 2 hours for best results).
  2. Prep tofu: Unwrap, cut into 1-inch cubes. Place in a large bowl, sprinkle with 1 tbsp cornstarch, toss gently to coat.
  3. First Bake: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Arrange tofu in a single layer. Bake for 20 minutes, flipping halfway.
  4. Make Glaze: While tofu bakes, whisk together soy sauce, sesame oil, brown sugar, minced garlic, rice vinegar, 1 tsp cornstarch, and 2 tbsp water in a small bowl until smooth (heavy viscous consistency).
  5. Glaze and Second Bake: Remove tofu from oven. Pour the thick, gooey glaze over the tofu on the baking sheet. Toss gently to coat.
  6. Return to oven: Bake for another 10-15 minutes, or until glaze is thickened, caramelized, sticky, and gooey, and tofu is golden brown.
  7. Garnish and Serve: Transfer to serving platter. Sprinkle with sesame seeds and fresh chopped parsley/cilantro. Serve immediately, scooping up extra gooey glaze.

Notes

Pressing the tofu thoroughly is key to a crispy texture. Adjust brown sugar to taste. For gluten-free, use tamari instead of soy sauce.
