BBQ Chicken Coleslaw Wraps

Ingredients
  

For the Wraps
  • 2 cups cooked chicken shredded (rotisserie chicken is perfect)
  • 0.75 cup thick BBQ sauce divided, plus more for drizzling
  • 4 large flour tortillas burrito-size
For the Quick Coleslaw
  • 2 cups coleslaw mix bagged shredded cabbage and carrots
  • 0.5 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • 0.25 tsp salt
  • 0.125 tsp black pepper
  • 0.25 cup fresh cilantro or parsley chopped, for garnish (optional)

Method
 

  1. In a medium bowl, combine shredded chicken and 1/2 cup of thick, gooey BBQ sauce. Stir to coat.
  2. In a separate bowl, make the slaw: combine coleslaw mix, mayonnaise, apple cider vinegar, sugar, salt, and pepper. Stir well.
  3. Warm the flour tortillas in a dry skillet over medium-high heat for 30-45 seconds per side, or in the microwave.
  4. Assemble the wraps: Lay a warm tortilla flat. Top with 1/4 of the BBQ chicken mixture, followed by 1/4 of the coleslaw.
  5. Fold in the short sides of the tortilla, then tightly roll from the bottom up to enclose the fillings.
  6. Drizzle with remaining BBQ sauce and garnish with fresh cilantro or parsley, if desired. Serve immediately.

Notes

For a crispy wrap, place the rolled wrap seam-side-down in a hot, dry skillet for 1-2 minutes to seal. These are best eaten fresh.
