Main Ingredients
  • 4 large flour tortillas burrito size
  • 2 cups cooked chicken shredded (rotisserie works best)
  • 0.75 cup BBQ sauce plus more for dipping
  • 2 cups Monterey Jack or Cheddar cheese shredded
  • 0.5 cup red onion finely diced
  • 0.25 cup fresh cilantro chopped
  • 2 tbsp butter or vegetable oil for frying

Method
 

  1. In a medium bowl, toss the shredded chicken with the BBQ sauce until evenly coated.
  2. Lay out tortillas. Sprinkle a layer of cheese on one half of each tortilla.
  3. Top the cheese with the BBQ chicken mixture, diced red onion, and cilantro.
  4. Add a second layer of cheese over the fillings (this helps seal the quesadilla). Fold the empty half over.
  5. Heat butter or oil in a large skillet over medium heat.
  6. Cook quesadillas, one or two at a time, for 3-4 minutes per side until golden brown and cheese is melted.
  7. Remove from pan and let rest for 1 minute before slicing into wedges.
  8. Serve hot with sour cream, extra BBQ sauce, or guacamole.

Notes

Shred your own cheese from a block for the smoothest melt.
