- Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Remove damaged outer leaves from cabbage. Slice vertically into 1-inch thick steaks, keeping the core intact to hold layers together.
- In a small bowl, whisk together olive oil, melted butter, minced garlic, paprika, onion powder, salt, and pepper.
- Arrange cabbage steaks on the baking sheet. Brush both sides generously with the seasoning mixture.
- Roast for 25-30 minutes until edges are crispy and charred, and the center is tender.
- While roasting, mix mayonnaise, sriracha, lemon juice, and garlic powder to create the dipping sauce.
- Garnish roasted steaks with fresh parsley and serve hot with the dipping sauce.
Notes
Do not remove the core of the cabbage before slicing, as it keeps the steaks intact.
