  • 1 lb Cod or Halibut or other firm white fish, cut into large pieces
  • 1/2 cup All-Purpose Flour
  • 2 large Eggs whisked
  • 1 1/2 cups Panko Breadcrumbs
  • 1 tsp Garlic Powder for flour dredge
  • 1/2 tsp Salt for flour dredge
  • 1/2 tsp Black Pepper for flour dredge
  • 1 tbsp Olive Oil for panko coating, optional for extra browning
Creamy Chipotle Sauce
  • 1/2 cup Sour Cream or Greek yogurt
  • 1/4 cup Mayonnaise
  • 1 tsp Chipotles in Adobo Sauce plus more to taste
  • 1/2 medium Lime Juice freshly squeezed (about 1 tbsp)
  • 1/2 tsp Honey or agave syrup

Method
 

  1. Start by preparing the purple cabbage slaw at least 30 minutes before serving. In a medium bowl, combine the shredded purple cabbage with fresh lime juice, a touch of vinegar, chopped cilantro, and salt. Let it sit in the refrigerator, tossing occasionally, to soften and absorb the dressing.
  2. Make the chipotle crema. In a blender or food processor, combine the sour cream, mayonnaise, chipotles in adobo, lime juice, and honey. Blend on high until completely smooth and creamy. Taste and add more chipotle for extra heat, if desired. Chill in the refrigerator until ready to serve.
  3. Cut the fish into large, uniform fillets, about 4-5 inches long. Pat them very dry with paper towels.
  4. Set up your breading station. In three separate shallow bowls: 1. Mix the flour with garlic powder, salt, and pepper. 2. Whisk the eggs. 3. Place the panko breadcrumbs. For extra browning and crispiness, toss the panko with a tablespoon of olive oil.
  5. Line a large sheet pan with parchment paper and place a wire cooling rack on top. Breading the fish: Dredge each fillet in the flour, shaking off any excess. Dip it into the egg wash. Finally, coat it completely in the panko breadcrumbs, pressing the panko firmly so it adheres well. Place the coated fillets on the wire rack.
  6. Let the breaded fish rest on the wire rack for 10-15 minutes before cooking. This helps the crust set and prevents it from falling off.
  7. Bake the fish: Preheat oven to 400°F (200°C). Bake the fish on the wire rack for 12-15 minutes, until the panko is deeply golden brown and crispy and the internal temperature of the fish has reached 145°F (63°C). *Optional*: For maximum crispiness, finish with a final 1-2 minutes under the broiler, watching carefully so the panko doesn't burn.
  8. Assemble the bowls: Start with a base of 1 cup of warm white rice in each bowl. Position the purple cabbage slaw on one side and an avocado fan of slices on the other. Lay the sliced crispy fish fillets on top of the base. Garnish generously with chopped cilantro and a heavy drizzle of the chipotle crema. Serve with lime wedges for a final squeeze of acid.

Notes

Using a wire rack on a sheet pan is key to ensuring the panko gets crispy on the bottom, avoiding the 'steaming' effect that happens when baking directly on a pan. For a truly premium experience, choose cod or halibut for their superior flakiness. The chipotle crema can be made up to 5 days in advance and used on sandwiches, grain bowls, and more.
