- Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish. Spread 1/2 cup of warm Birria sauce on the bottom.
- Warm tortillas: Quickly dip each tortilla in warm Birria sauce or briefly fry in a lightly oiled skillet to make them pliable.
- Roll enchiladas: Place 1/4 cup of shredded Birria beef and a sprinkle of cheese down the center of each warm tortilla. Roll up and place seam-down in the baking dish, packing them snugly.
- Sauce and Cheese: Pour the remaining thick, gooey Birria sauce (heavy viscous consistency) over the rolled enchiladas. Top evenly with the remaining shredded cheese.
- Bake for 15-20 minutes until the sauce is bubbling and the cheese is completely melted and unevenly bubbled (authentic homemade imperfections).
- Garnish and Serve: Let cool for 5 minutes. Top generously with fresh red onion and cilantro. Serve immediately.
Notes
Ensure your Birria sauce has a heavy viscous consistency; if too thin, thicken slightly with a cornstarch slurry. For extra richness, use Oaxaca cheese.
