Main Ingredients
  • 1 lb smoked sausage sliced (Andouille or Kielbasa)
  • 1 tbsp vegetable oil
  • 1 medium onion diced
  • 1 medium green bell pepper diced
  • 1 medium red bell pepper diced
  • 3 cloves garlic minced
  • 1.5 cups long-grain white rice uncooked, rinsed
  • 2 cans black beans 15oz each, drained and rinsed
  • 2.5 cups chicken broth
Spices
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 0.5 tsp dried oregano
  • 0.5 tsp black pepper

Method
 

  1. Slice sausage into rounds and dice the onion and peppers.
  2. Heat oil in a large skillet over medium-high heat. Brown the sausage slices for 3-5 minutes, then remove.
  3. Add onion and peppers to the skillet. Sauté for 4-5 minutes until soft. Add garlic and cook for 30 seconds.
  4. Stir in the uncooked rice and toast for 2 minutes. Add the cumin, paprika, oregano, and pepper.
  5. Pour in the chicken broth and stir to scrape up browned bits. Add the black beans and cooked sausage.
  6. Bring to a boil, then reduce heat to low. Cover with a lid and simmer for 18-20 minutes. Do not peek.
  7. Remove from heat and let sit, covered, for 10 minutes.
  8. Fluff with a fork and serve hot.

Notes

Rinsing the rice prevents it from becoming gummy. Adjust salt at the end as sausage and broth contain salt.
