Blackberry Balsamic & Brie Grilled Cheese

Ingredients
  

For the Grilled Cheese
  • 4 slices thick-cut bread sourdough, brioche, or challah
  • 1 tbsp butter softened
  • 1 wheel Brie cheese 4-5 oz, rind removed and thinly sliced
  • 0.5 cup fresh blackberries lightly crushed, or 1/4 cup blackberry jam/preserves
  • 1 tbsp balsamic glaze or 1 tsp balsamic vinegar for homemade glaze
For Homemade Balsamic Glaze (Optional)
  • 0.25 cup balsamic vinegar
  • 1 tbsp honey or maple syrup optional

Equipment

  • Skillet or griddle
  • Small saucepan (if making glaze)

Method
 

  1. If making homemade glaze: simmer balsamic vinegar and optional honey/maple syrup in a small saucepan for 5-10 minutes until reduced and thickened. Set aside.
  2. Remove rind from Brie and slice thinly. Gently crush fresh blackberries (if using) or have jam ready.
  3. On two bread slices, arrange Brie. On the other two, spread crushed blackberries/jam. Drizzle balsamic glaze over blackberries.
  4. Combine halves to form sandwiches. Generously butter one side of each sandwich.
  5. Heat a skillet over medium-low heat. Place buttered side down, butter top side. Cook 3-5 minutes per side until golden and cheese is melted and gooey. Press gently.
  6. Remove from pan, slice diagonally, and serve immediately while hot and gooey.

Notes

Use thick-cut bread for best results. For extra flavor, add a thin slice of prosciutto. Adjust balsamic glaze to your preferred sweetness/tanginess.
