Ingredients
  

Blackberry Compote
  • 1 cup fresh blackberries
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey or brown sugar optional
  • 1 tsp fresh thyme leaves
Sandwich Build
  • 4 slices sourdough bread thick cut
  • 6 oz Brie cheese sliced
  • 3 tbsp salted butter softened

  • Cast iron skillet or non-stick pan
  • Small saucepan
  • Spatula

Method
 

  1. In a small saucepan, combine blackberries, balsamic vinegar, and honey over medium heat.
  2. Simmer for 8-10 minutes, smashing berries slightly, until mixture is thick and jam-like. Stir in thyme and remove from heat.
  3. Butter one side of each slice of bread.
  4. On the non-buttered side, layer slices of Brie cheese.
  5. Spoon the blackberry compote over the cheese.
  6. Top with remaining bread, buttered side facing out.
  7. Heat a skillet over medium-low heat. Cook sandwiches for 3-4 minutes per side until golden brown and cheese is melted.
  8. Let rest for 1 minute before slicing to prevent filling from spilling out.

Notes

Removing the rind from the Brie is optional but results in a smoother melt. Ensure the compote is thick before adding to the bread to avoid sogginess.
