Blackberry Cinnamon Rolls with Cream Cheese Frosting

Ingredients
  

Dough
  • 1 cup whole milk warm (110°F)
  • 1 packet active dry yeast (2 1/4 tsp)
  • 0.5 cup granulated sugar divided
  • 0.33 cup unsalted butter melted
  • 2 eggs large, room temperature
  • 4.5 cups all-purpose flour approximate
  • 1 tsp salt
Filling
  • 0.5 cup unsalted butter very soft
  • 0.75 cup light brown sugar packed
  • 2 tbsp ground cinnamon
  • 0.5 cup blackberry jam seedless preferred
Blackberry Cream Cheese Frosting
  • 8 oz cream cheese softened block style
  • 0.25 cup unsalted butter softened
  • 3 cups powdered sugar sifted
  • 0.5 cup fresh blackberries for puree
  • 1 tsp vanilla extract
  • 1 tsp lemon juice

Equipment

Method
 

  1. In a large bowl, combine warm milk, 1 tsp sugar, and yeast. Let sit 5-10 minutes until foamy.
  2. Whisk in melted butter, eggs, and remaining sugar. Add salt and gradually mix in flour until a soft dough forms.
  3. Knead dough for 7-10 minutes until smooth and elastic. Place in an oiled bowl, cover, and let rise for 1-1.5 hours until doubled.
  4. In a small bowl, mix brown sugar and cinnamon.
  5. Punch down dough and roll into a 12x18 inch rectangle on a floured surface.
  6. Spread softened butter over the dough, followed by the cinnamon-sugar mixture, and then the blackberry jam.
  7. Roll up tightly into a log and cut into 12 slices. Place in a greased 9x13 inch pan.
  8. Cover and let rise for another 30-45 minutes until puffy. Preheat oven to 350°F (175°C).
  9. Bake for 25-30 minutes until golden brown. Meanwhile, puree fresh blackberries and strain to remove seeds.
  10. Beat cream cheese and butter until smooth. Gradually add powdered sugar, blackberry puree, vanilla, and lemon juice until fluffy.
  11. Let rolls cool for 10 minutes, then spread generously with the frosting. Serve warm.
