Ingredients
  

Pastry & Filling
  • 1 package puff pastry 2 sheets, thawed
  • 4 oz goat cheese softened
  • 0.33 cup blackberry jam or preserves
  • 0.5 cup fresh blackberries mashed
  • 1 tbsp honey
  • 1 tbsp fresh thyme leaves
Topping
  • 1 large egg for egg wash
  • 1 tbsp water for egg wash
  • 1 tbsp coarse sugar optional

Equipment

  • Parchment paper
  • Pizza cutter
  • Pastry brush

Method
 

  1. Preheat oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. In a small bowl, mix softened goat cheese, honey, and thyme until smooth.
  3. Unfold one sheet of puff pastry on a lightly floured surface. Spread the goat cheese mixture evenly over the sheet.
  4. Mix mashed blackberries with jam and spread over the goat cheese layer.
  5. Place the second sheet of puff pastry on top to sandwich the filling.
  6. Use a pizza cutter to slice the pastry into 1-inch wide strips.
  7. Twist each strip gently and place on the prepared baking sheets.
  8. Whisk egg with water and brush over the twists. Sprinkle with coarse sugar if desired.
  9. Bake for 18-22 minutes until puffed and golden brown.

Notes

Keep pastry cold for best puff. Serve warm.
