Method
- Preheat oven to 400°F (200°C) and line two baking sheets with parchment paper.
- In a small bowl, mix softened goat cheese, honey, and thyme until smooth.
- Unfold one sheet of puff pastry on a lightly floured surface. Spread the goat cheese mixture evenly over the sheet.
- Mix mashed blackberries with jam and spread over the goat cheese layer.
- Place the second sheet of puff pastry on top to sandwich the filling.
- Use a pizza cutter to slice the pastry into 1-inch wide strips.
- Twist each strip gently and place on the prepared baking sheets.
- Whisk egg with water and brush over the twists. Sprinkle with coarse sugar if desired.
- Bake for 18-22 minutes until puffed and golden brown.
Notes
Keep pastry cold for best puff. Serve warm.
