Ingredients
  

Pistachio Crust
  • 1 cup all-purpose flour
  • 0.5 cup shelled pistachios finely ground
  • 0.33 cup powdered sugar
  • 0.5 cup unsalted butter cold and cubed
  • 0.25 tsp salt
Blackberry Filling
  • 2 cups blackberries fresh or frozen
  • 1 cup granulated sugar
  • 3 large eggs
  • 0.5 cup all-purpose flour
  • 2 tbsp lemon juice
Topping
  • 1 cup fresh blackberries
  • 0.25 cup pistachios chopped

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
  2. Pulse pistachios in a food processor until fine. Add flour, powdered sugar, salt, and cold butter. Pulse until crumbly.
  3. Press mixture firmly into the bottom of the pan. Bake for 15-18 minutes until lightly golden.
  4. While crust bakes, puree blackberries and strain through a sieve to remove seeds (optional).
  5. Whisk sugar, flour, and eggs together. Stir in lemon juice and blackberry puree until smooth.
  6. Pour filling over the hot crust. Bake for 25-30 minutes until set.
  7. Cool completely, then chill in fridge for 2 hours before slicing.
  8. Top with fresh berries and chopped pistachios before serving.

Notes

Strain the blackberry puree for a smoother, more refined texture.
