- Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
- Pulse pistachios in a food processor until fine. Add flour, powdered sugar, salt, and cold butter. Pulse until crumbly.
- Press mixture firmly into the bottom of the pan. Bake for 15-18 minutes until lightly golden.
- While crust bakes, puree blackberries and strain through a sieve to remove seeds (optional).
- Whisk sugar, flour, and eggs together. Stir in lemon juice and blackberry puree until smooth.
- Pour filling over the hot crust. Bake for 25-30 minutes until set.
- Cool completely, then chill in fridge for 2 hours before slicing.
- Top with fresh berries and chopped pistachios before serving.
Notes
Strain the blackberry puree for a smoother, more refined texture.
