Blue Christmas Truffles

Rich and creamy white chocolate ganache truffles dyed a festive winter blue and rolled in sparkling sugar crystals.

Ingredients
  

The Truffle Base
  • 3 cups white chocolate chips high quality
  • 0.75 cup heavy whipping cream
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract or peppermint
  • 2-3 drops blue gel food coloring do not use liquid
The Coating
  • 1 cup white sanding sugar sparkling sugar

Equipment

  • Melon Baller
  • Heat-proof bowl
  • Small saucepan

Method
 

  1. Place white chocolate chips and butter in a medium heat-proof bowl.
  2. Heat heavy cream in a small saucepan until it just begins to simmer. Do not boil vigorously.
  3. Pour hot cream over the chocolate and let sit undisturbed for 5 minutes.
  4. Gently whisk until the mixture is smooth and glossy. Stir in vanilla and blue gel coloring.
  5. Cover directly with plastic wrap and refrigerate for 2-3 hours until firm.
  6. Scoop tablespoons of the mixture and roll into balls between your palms.
  7. Roll each ball in white sanding sugar to coat completely.
  8. Store in the refrigerator until ready to serve.

Notes

If the mixture is too soft to roll, chill for another 30 minutes.
