- Peel, core, and chop the apples into roughly even pieces.
- In a large pot, combine the chopped apples, blueberries, ground cinnamon, strips of lemon peel, and water.
- Cover the pot and place over medium heat until it begins to bubble gently.
- Reduce the heat to medium-low and simmer for 20-25 minutes, or until the apples are completely tender and the blueberries have burst.
- Remove the pot from the heat. *Crucially*, fish out and discard the strips of lemon peel.
- Using an immersion blender, or carefully transferring to a standard blender, puree the fruit mixture until completely smooth and vibrant purple.
- Serve warm, or transfer to airtight jars and chill in the refrigerator. It will thicken slightly as it cools.
Notes
If using tart apples (like Granny Smith), you may need to stir in 1-2 tablespoons of maple syrup or honey at the end if desired, though sweet apple varieties usually provide enough natural sugar.
