- Preheat oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners.
- Make the filling: In a small bowl, beat softened cream cheese, 1/4 cup sugar, and vanilla until smooth. Set aside.
- In a large bowl, whisk together flour, baking powder, and salt. Toss blueberries in the flour mixture to coat.
- In a medium bowl, whisk eggs, 1 cup sugar, oil, buttermilk, and vanilla until smooth.
- Pour wet ingredients into dry ingredients. Fold gently until just combined (a few flour streaks are fine). Fold in blueberries.
- Spoon 1 tablespoon of batter into each muffin cup. Add a dollop of cream cheese filling. Top with remaining batter.
- Sprinkle tops with coarse sugar. Bake at 400°F for 5 minutes, then reduce heat to 375°F (190°C) and bake for 15-18 more minutes.
- Cool in pan for 5 minutes before moving to a wire rack.

Store in the refrigerator due to the cream cheese filling.
