Method
- Place blueberries, 1 tbsp sweetener, and lemon juice in a small saucepan over medium heat.
- Simmer for 8-10 minutes, mashing berries slightly, until the mixture thickens into a jam-like consistency. Remove from heat and cool completely.
- In a mixing bowl, whisk together the Greek yogurt, remaining sweetener, and vanilla extract until smooth.
- Line a mini muffin tin with paper or silicone liners.
- Fill each cup halfway with the yogurt mixture.
- Add a teaspoon of the cooled blueberry compote on top, then cover with a bit more yogurt.
- Use a toothpick to gently swirl the blueberry mixture into the yogurt to create a marble effect.
- Freeze for at least 2 hours or until solid.
- Remove from liners and enjoy. Allow to sit for 3 minutes at room temperature for a creamier texture.
