Ingredients
  

The Meatballs
  • 1 lb ground pork
  • 0.5 cup breadcrumbs panko or regular
  • 1 large egg
  • 2 cloves garlic minced
  • 0.25 cup onion finely minced
The Mash
  • 3 large sweet potatoes peeled and cubed
  • 3 tbsp butter for mash
  • 0.25 cup milk or cream
The Bourbon-Maple Sauce
  • 0.33 cup bourbon or beef broth
  • 0.33 cup maple syrup pure
  • 2 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 1 tbsp butter to finish sauce

Method
 

  1. Boil cubed sweet potatoes in salted water for 15-20 minutes until tender. Drain and mash with butter, milk, salt, and pepper.
  2. In a bowl, mix ground pork, breadcrumbs, egg, garlic, onion, salt, and pepper. Form into 12-15 meatballs.
  3. Sear meatballs in a skillet with oil over medium-high heat until browned (5-6 mins). Remove and set aside.
  4. Deglaze pan with bourbon. Add maple syrup, soy sauce, and vinegar. Simmer for 2 minutes.
  5. Return meatballs to the pan. Cover and simmer on low for 8-10 minutes until cooked through and glazed.
  6. Stir in 1 tbsp butter to thicken the sauce.
  7. Serve meatballs over sweet potato mash, drizzled with extra sauce and garnished with parsley.

Notes

For a non-alcoholic version, replace bourbon with apple juice or beef broth.
