- Remove pork chops from fridge 20 minutes before cooking and pat dry with paper towels.
- Mix salt, pepper, garlic powder, and onion powder; rub generously onto both sides of the chops.
- Heat olive oil and butter in a large skillet over medium-high heat until butter foams.
- Add pork chops and sear for 4-5 minutes on one side until a golden brown crust forms.
- Flip the chops and immediately top each with a generous portion of Boursin cheese.
- Reduce heat to medium-low, add chicken broth if using, and cover the pan.
- Cook covered for 3-5 minutes until cheese softens and pork reaches 145°F (63°C).
- Let rest for 5 minutes before serving garnished with parsley.
Notes
Ensure you buy thick-cut chops to prevent drying out. If the cheese isn't melting enough, you can place the skillet under the broiler for 1-2 minutes, but watch closely.
