Ingredients
  

Pot Roast
  • 3-4 lb beef chuck roast trimmed
  • 2 tbsp olive oil
  • 1 cup red wine dry
  • 2 cups beef broth
  • 1 large onion chopped
  • 2 carrots chopped
  • 2 stalks celery chopped
  • 4 cloves garlic minced
  • 1 bunch fresh thyme
Risotto
  • 1.5 cups Arborio rice
  • 0.5 cup white wine dry
  • 5-6 cups chicken broth warm
  • 0.5 cup Parmesan cheese grated
  • 2 tbsp unsalted butter
  • 1 shallot minced

Method
 

  1. Preheat oven to 325°F. Season beef roast generously with salt and pepper.
  2. Sear beef in a Dutch oven with olive oil over medium-high heat until crusted on all sides. Remove beef.
  3. Add onions, carrots, and celery to the pot. Sauté until soft. Add garlic and cook for 1 minute.
  4. Deglaze with red wine, scraping up browned bits. Add beef broth and herbs. Return beef to pot.
  5. Cover and braise in oven for 3 to 3.5 hours until fork-tender.
  6. 30 mins before beef is done: Sauté shallot in butter in a saucepan. Add Arborio rice and toast for 2 mins.
  7. Add white wine to rice and stir until absorbed. Add warm chicken broth one ladle at a time, stirring constantly until absorbed.
  8. Cook rice until creamy and al dente. Remove from heat, stir in Parmesan and butter. Serve topped with shredded beef and gravy.

Notes

Ensure the chicken broth is hot when adding to the risotto to maintain cooking temperature.
