Brazilian Brigadeiro "Gimme Gummy" Bites

Ingredients
  

Brigadeiro Fudge Base
  • 1 can (14 oz) sweetened condensed milk
  • 3 tbsp unsweetened cocoa powder sifted
  • 1 tbsp unsalted butter plus extra for greasing
  • 1 pinch fine sea salt
Filling and Coating
  • 24-30 small gummy candies like gummy bears
  • 1 cup chocolate sprinkles

Equipment

  • Heavy-bottomed saucepan
  • Silicone spatula or wooden spoon
  • Large dinner plate
  • Mini paper cupcake liners

Method
 

  1. Lightly grease a large dinner plate with butter and set aside.
  2. In a heavy-bottomed saucepan, combine the sweetened condensed milk, cocoa powder, 1 tablespoon of butter, and salt off the heat. Stir to combine.
  3. Place the pan over medium-low heat. Cook, stirring constantly and scraping the bottom and sides, until the mixture thickens significantly (about 10-15 minutes).
  4. The fudge is ready when you run your spatula through the middle and it takes 2-3 seconds for the mixture to flow back together.
  5. Pour the hot mixture onto the prepared greased plate. Spread slightly and let it cool completely at room temperature (1-2 hours).
  6. Once cool, grease your hands with butter. Scoop about a tablespoon of the fudge, roll it into a ball, and flatten it into a small disc in your palm.
  7. Place one gummy candy in the center of the disc. Fold the chocolate around the gummy, sealing it completely, and roll into a smooth ball.
  8. Roll the stuffed ball in the chocolate sprinkles until fully coated. Place in a mini paper cup. Repeat with the remaining dough.

Notes

Store in an airtight container at room temperature for up to 3 days for the best texture. If refrigerating, let them sit at room temperature for an hour before serving so the gummy inside softens.
