Ingredients
  

Buffalo Chicken Filling
  • 2 cups cooked chicken breast finely shredded
  • 8 oz full-fat cream cheese softened to room temperature
  • 0.5 cup buffalo wing sauce like Frank's RedHot
  • 1 cup shredded mozzarella cheese
  • 0.5 cup shredded sharp cheddar cheese
  • 0.25 tsp garlic powder
  • 0.25 tsp onion powder
Dough & Topping
  • 2 cans refrigerated large flaky biscuits 16 oz each, 16 biscuits total
  • 4 tbsp unsalted butter melted
  • 0.5 tsp garlic powder
  • 1 tbsp fresh parsley finely chopped
  • Flaky sea salt for sprinkling

Method
 

  1. Preheat oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. In a bowl, beat the softened cream cheese and buffalo sauce until smooth. Fold in the shredded chicken, mozzarella, cheddar, garlic powder, and onion powder.
  3. Separate the canned biscuits. Flatten each biscuit out into a 4-5 inch circle, leaving the center slightly thicker than the edges.
  4. Place 1.5 to 2 tablespoons of the buffalo chicken filling into the center of each flattened biscuit.
  5. Gather the edges of the dough over the filling and pinch tightly to seal. Roll gently into a ball.
  6. Place the sealed bombs seam-side down into the prepared baking dish.
  7. Bake for 18-22 minutes until puffed and golden brown.
  8. Mix melted butter, garlic powder, and parsley. Brush generously over the hot bombs immediately after removing from the oven, then sprinkle with flaky salt.

Notes

Ensure your cream cheese is very soft so it blends smoothly with the buffalo sauce. Do not overstuff the biscuits or they may burst open while baking.
