Ingredients

Steak Bites
  • 1.5 lbs sirloin steak cubed
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp garlic powder
Cheesy Shells
  • 8 oz pasta shells dry
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 1.5 cups cheddar cheese shredded
  • 0.5 cup parmesan cheese grated
  • 1 tbsp parsley chopped, for garnish

Equipment

  • Large skillet
  • Large pot
  • Chef's knife
  • Cutting board

Method

  1. Boil pasta in salted water until al dente. Drain, reserving 1/2 cup pasta water.
  2. Toss steak cubes with Cajun seasoning, garlic powder, salt, and pepper.
  3. Heat oil and 1 tbsp butter in a large skillet over high heat. Sear steak bites for 2-3 minutes until browned. Remove and set aside.
  4. In the same skillet, reduce heat to medium. Melt remaining 2 tbsp butter and sauté minced garlic for 30 seconds.
  5. Pour in heavy cream and chicken broth. Simmer for 3-4 minutes until slightly thickened.
  6. Remove from heat. Stir in cheddar and parmesan cheese until melted and smooth.
  7. Add cooked pasta to the sauce and toss to coat. Stir in reserved pasta water if needed to thin sauce.
  8. Add steak bites back to the skillet. Garnish with parsley and serve immediately.

Notes

Use a block of cheese and grate it yourself for the smoothest sauce. Pre-shredded cheese can cause graininess.
