Method
- Boil pasta in salted water until al dente. Drain, reserving 1/2 cup pasta water.
- Toss steak cubes with Cajun seasoning, garlic powder, salt, and pepper.
- Heat oil and 1 tbsp butter in a large skillet over high heat. Sear steak bites for 2-3 minutes until browned. Remove and set aside.
- In the same skillet, reduce heat to medium. Melt remaining 2 tbsp butter and sauté minced garlic for 30 seconds.
- Pour in heavy cream and chicken broth. Simmer for 3-4 minutes until slightly thickened.
- Remove from heat. Stir in cheddar and parmesan cheese until melted and smooth.
- Add cooked pasta to the sauce and toss to coat. Stir in reserved pasta water if needed to thin sauce.
- Add steak bites back to the skillet. Garnish with parsley and serve immediately.
Notes
Use a block of cheese and grate it yourself for the smoothest sauce. Pre-shredded cheese can cause graininess.
