Ingredients
  

For the Sushi Bowls
  • 2 cups cooked sushi rice seasoned with rice vinegar
  • 1 cup imitation crab meat flaked or diced
  • 1 cucumber diced
  • 1 large avocado thinly sliced or diced
  • 2 tbsp black sesame seeds
  • 1 tbsp furikake Japanese rice seasoning
For the Spicy Mayo Sauce
  • 0.5 cup mayonnaise full-fat recommended
  • 1-2 tbsp Sriracha adjust to spice level
  • 1 tsp rice vinegar
  • 0.5 tsp sesame oil

Method
 

  1. Cook & Season Rice: Prepare sushi rice. While warm, fold in 2 tbsp rice vinegar, 1 tbsp sugar, and 1/2 tsp salt (per 2 cups rice). Let cool slightly.
  2. Prep Toppings: Dice cucumber and imitation crab. Thinly slice avocado.
  3. Make Spicy Mayo: Whisk mayonnaise, Sriracha, rice vinegar, and sesame oil until smooth. Sauce should be thick and gooey.
  4. Assemble Bowls: Divide sushi rice into bowls. Arrange cucumber, avocado, and imitation crab over rice.
  5. Garnish & Serve: Drizzle generously with spicy mayo. Sprinkle with black sesame seeds and furikake. Serve immediately.

Notes

Use a good quality sushi rice for best texture. Keep avocado whole until just before serving to prevent browning. Adjust Sriracha to your preferred heat.
