Method
- Using a melon baller, scoop the cantaloupe and honeydew into uniform spheres. Place them in a large mixing bowl.
- Add the halved cherry tomatoes and drained fresh mozzarella balls to the bowl with the melon.
- Drizzle lightly with 1 tablespoon of the olive oil and season with a pinch of flaky sea salt and black pepper. Toss gently to combine.
- Transfer the fruit and cheese mixture to a large, shallow serving platter, spreading it evenly.
- Tear the prosciutto slices into smaller pieces and gently fold or scrunch them, tucking them in among the melon and cheese on the platter.
- Scatter the fresh basil evenly over the top of the salad.
- Finish with a final drizzle of the remaining olive oil, balsamic glaze (if using), and more freshly cracked black pepper.
- Serve immediately while cold and refreshing.
Notes
Do not assemble the salad too far in advance. The salt will draw moisture out of the melon and tomatoes, and the prosciutto will become soggy. You can prep the fruit and cheese ahead of time, but wait to combine and dress until right before serving.
