Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 1 tsp salt
  • 0.5 tsp garlic powder optional
  • 0.5 tsp black pepper
Wet Ingredients
  • 2 large eggs
  • 1 cup buttermilk or regular milk
  • 0.33 cup olive oil extra virgin
Mix-ins
  • 1.5 cups cherry tomatoes halved
  • 1 cup mozzarella cheese shredded or small cubes
  • 0.5 cup fresh basil chopped

Equipment

  • 9x5 Loaf Pan

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x5 loaf pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and spices.
  3. In a separate bowl, whisk eggs, buttermilk, and olive oil.
  4. Pour wet ingredients into dry and stir until just combined. Do not overmix.
  5. Fold in mozzarella, basil, and 1 cup of halved tomatoes (reserve some for top).
  6. Pour batter into pan. Press remaining tomatoes into the top.
  7. Bake for 50-60 minutes until a toothpick comes out clean. Cool completely before slicing.

Notes

Toss tomatoes in a little flour before adding to prevent sinking. Store in fridge.
