- Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment paper, leaving an overhang on the sides for easy removal.
- In a large mixing bowl, whisk together the flour, baking powder, garlic powder, kosher salt, and black pepper.
- Add the mozzarella cheese, chopped sun-dried tomatoes, and fresh basil to the flour mixture. Toss gently so the mix-ins are coated in flour (this prevents them from sinking during baking).
- In a separate medium bowl, whisk together the buttermilk, eggs, and olive oil until smooth and well combined.
- Pour the wet ingredients into the dry ingredients. Using a rubber spatula, gently fold the mixture together until just combined. Do not overmix; the batter should be thick and slightly lumpy.
- Scrape the batter into the prepared loaf pan and spread it into an even layer.
- Bake on the center rack for 45 to 55 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes. Then, use the parchment paper overhang to lift the bread out and transfer it to a wire rack to cool completely before slicing.
Notes
If the bread is browning too quickly in the oven but the center is still wet, tent a piece of aluminum foil loosely over the top for the remaining baking time.
