Method
- Melt butter and olive oil in a large skillet over medium heat. Add sliced onions and toss to coat.
- Cook onions for 5-10 minutes until softened, then reduce heat to medium-low. Cook for 30-40 minutes, stirring occasionally, until deep golden brown and caramelized.
- Stir in brown sugar, balsamic vinegar, thyme, salt, and pepper. Cook for 2 more minutes. Remove from heat and cool slightly.
- Preheat oven to 400°F (200°C). Line baking sheets with parchment paper.
- Unfold puff pastry and cut into squares. Score a border 1/2 inch from the edge and dock the center with a fork.
- Brush the borders with egg wash.
- Place a spoonful of onions in the center of each square, spreading to the border. Top with crumbled goat cheese.
- Bake for 15-20 minutes until pastry is puffed and golden. Garnish with fresh thyme and serve.
Notes
Ensure puff pastry is cold before baking to ensure maximum rise.
