Ingredients
  

Base
  • 1 sheet puff pastry thawed
  • 1 egg beaten with 1 tsp water (for wash)
Filling
  • 2 cups butternut squash peeled and cubed (1/2 inch)
  • 1 large red onion sliced into rings
  • 4 oz goat cheese crumbled
  • 2 tbsp olive oil divided
  • 1 tbsp butter
  • 1 tbsp balsamic vinegar
  • 1 tbsp fresh thyme
  • 1 tsp honey optional

Method
 

  1. Preheat oven to 400°F (200°C). Toss squash cubes with 1 tbsp olive oil, salt, and pepper.
  2. Roast squash on a baking sheet for 15-20 minutes until tender. Set aside.
  3. Meanwhile, sauté sliced onions in a skillet with butter and remaining oil over medium heat for 15-20 mins until caramelized.
  4. Stir balsamic vinegar and thyme into the onions. Remove from heat.
  5. Unroll puff pastry on parchment paper. Score a 1-inch border lightly with a knife and prick the center with a fork.
  6. Spread onions inside the border, top with roasted squash, and crumble goat cheese over everything.
  7. Brush the pastry border with egg wash.
  8. Bake for 20-25 minutes until the pastry is puffed and golden brown.
  9. Garnish with fresh thyme and serve warm.

Notes

Ensure the puff pastry is cold when it goes into the oven for the best rise.
