- In a large bowl, beat softened butter and 1/2 cup powdered sugar until light and creamy. Stir in vanilla.
- In a separate bowl, whisk together flour, ground cardamom, and salt.
- Gradually add the flour mixture to the butter mixture, mixing just until a dough forms. Do not overmix.
- Shape dough into a disk, wrap in plastic, and chill for at least 1 hour.
- Preheat oven to 325°F (160°C) and line baking sheets with parchment paper.
- On a floured surface, roll dough to 1/4-inch thickness. Cut into desired shapes and place on prepared baking sheets.
- Bake for 12-15 minutes until edges are pale golden. Cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
- For the glaze, whisk together 1.5 cups powdered sugar, orange juice, and orange zest until smooth.
- Dip the tops of cooled cookies into the glaze or spread it on with a spoon. Sprinkle immediately with caramelized sugar bits if using.
- Allow the glaze to set completely before serving or storing in an airtight container.
Notes
For the best flavor, grind your own cardamom seeds using a mortar and pestle or spice grinder.
