Ingredients
  

The Base
  • 4 tbsp unsalted butter
  • 1 medium onion diced
  • 6 cloves garlic minced
  • 1 tbsp fresh thyme chopped
The Soup
  • 2 lbs Yukon Gold potatoes peeled and cubed
  • 0.25 cup all-purpose flour
  • 4 cups chicken broth or vegetable broth
  • 2 cups whole milk or half-and-half
  • 2 cups sharp cheddar cheese freshly grated

Equipment

  • Large pot or Dutch oven
  • Potato masher
  • Whisk

Method
 

  1. Melt butter in a large pot over medium heat. Sauté onion for 5 minutes until soft.
  2. Add garlic and herbs, cooking for 1 minute until fragrant.
  3. Stir in flour and cook for 1-2 minutes to make a roux.
  4. Gradually whisk in the broth. Add potatoes, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  6. Mash half the potatoes in the pot for a thicker texture.
  7. Stir in milk and warm through. Remove from heat and stir in cheddar cheese until melted.
  8. Serve garnished with herbs, cheese, and optional bacon.
