- Melt butter in a large pot over medium heat. Sauté onion for 5 minutes until soft.
- Add garlic and herbs, cooking for 1 minute until fragrant.
- Stir in flour and cook for 1-2 minutes to make a roux.
- Gradually whisk in the broth. Add potatoes, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
- Mash half the potatoes in the pot for a thicker texture.
- Stir in milk and warm through. Remove from heat and stir in cheddar cheese until melted.
- Serve garnished with herbs, cheese, and optional bacon.
