Ingredients
  

Pretzel Dough
  • 1.5 cups warm water 110°F
  • 1 packet active dry yeast
  • 1 tbsp sugar
  • 4.5 cups all-purpose flour
  • 2 tsp salt
  • 4 tbsp unsalted butter melted
Filling
  • 1 lb ground beef lean
  • 1 small onion diced
  • 4 oz cheddar cheese cubed
  • 1 tbsp Worcestershire sauce
  • 1 tbsp mustard
  • 2 tbsp ketchup
Water Bath & Topping
  • 8 cups water
  • 0.5 cup baking soda
  • 1 large egg beaten with water
  • 2 tbsp coarse salt

Method
 

  1. Combine warm water, sugar, and yeast in mixer bowl. Let bloom for 10 minutes.
  2. Add melted butter, salt, and flour. Knead for 5 minutes until smooth.
  3. Place dough in oiled bowl, cover, and let rise for 1 hour until doubled.
  4. Brown ground beef with onion in a skillet. Stir in condiments and seasonings. Let cool completely.
  5. Preheat oven to 400°F (200°C) and boil water with baking soda in a large pot.
  6. Divide dough into 16 pieces. Flatten, fill with beef and a cheese cube, then seal tightly.
  7. Boil each bomb for 30 seconds, then transfer to baking sheet.
  8. Brush with egg wash, sprinkle with salt, and bake 15-18 minutes until golden brown.

Notes

Ensure the dough is pinched tightly to prevent cheese leaks. Serve with mustard or cheese dip.
