Ingredients
  

Base
  • 24 large fresh strawberries washed and dried
Cheesecake Filling
  • 8 oz cream cheese softened
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 0.25 cup heavy whipping cream
Topping
  • 0.5 cup graham cracker crumbs
  • 2 tbsp freeze-dried strawberry powder optional, for color

Method
 

  1. Wash strawberries thoroughly and pat completely dry with paper towels.
  2. Slice strawberries in half lengthwise and carefully scoop out a small hollow in the center using a spoon or melon baller.
  3. In a medium bowl, beat softened cream cheese until smooth.
  4. Add powdered sugar and vanilla, mixing until combined.
  5. Add heavy cream and beat on high speed until mixture is fluffy and holds peaks.
  6. Transfer filling to a piping bag and pipe into hollowed strawberries.
  7. Mix graham cracker crumbs with strawberry powder (if using) and sprinkle over the filled berries.
  8. Serve immediately or chill for up to 2 hours.

Notes

Ensure strawberries are completely dry before filling to prevent the cream cheese from sliding off.
