Cheesy Chicken Garlic Bread Sandwich

Ingredients
  

Main Ingredients
  • 4 slices thick-cut bread Sourdough or Texas toast
  • 2 cups cooked chicken shredded (rotisserie chicken is great)
  • 1 cup shredded low-moisture mozzarella cheese
  • 8 slices provolone cheese
  • 0.5 cup unsalted butter softened (1 stick)
Garlic Butter
  • 3-4 cloves garlic minced
  • 1 tbsp fresh parsley finely chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 cup mayonnaise optional, for mixing with chicken

  • Large skillet (preferably cast iron)
  • Small bowl
  • Spatula

Method
 

  1. In a small bowl, mash together the softened butter, minced garlic, parsley, salt, and pepper to create a garlic butter paste.
  2. (Optional) In another bowl, mix the shredded chicken with mayonnaise.
  3. Lay out all 4 slices of bread. On 2 slices, layer: 2 slices of provolone, 1 cup of shredded chicken, 0.5 cup of mozzarella, and 2 more slices of provolone.
  4. Place the remaining bread slices on top to close the sandwiches.
  5. Generously spread half of the garlic butter on the *outside* of the top slices of bread.
  6. Place sandwiches butter-side-down in a large skillet over medium-low heat.
  7. Spread the remaining garlic butter on the new top-facing slices.
  8. Cook for 4-6 minutes per side, until the bread is golden brown and the cheese is completely melted, thick, and gooey.
  9. Let rest for 1 minute, then slice diagonally and serve hot.

Notes

Cook low and slow! Covering the pan for the first few minutes can help the cheese melt into a thick, viscous consistency without burning the bread.
