- In a small bowl, mash together the softened butter, minced garlic, parsley, salt, and pepper to create a garlic butter paste.
- (Optional) In another bowl, mix the shredded chicken with mayonnaise.
- Lay out all 4 slices of bread. On 2 slices, layer: 2 slices of provolone, 1 cup of shredded chicken, 0.5 cup of mozzarella, and 2 more slices of provolone.
- Place the remaining bread slices on top to close the sandwiches.
- Generously spread half of the garlic butter on the *outside* of the top slices of bread.
- Place sandwiches butter-side-down in a large skillet over medium-low heat.
- Spread the remaining garlic butter on the new top-facing slices.
- Cook for 4-6 minutes per side, until the bread is golden brown and the cheese is completely melted, thick, and gooey.
- Let rest for 1 minute, then slice diagonally and serve hot.
Notes
Cook low and slow! Covering the pan for the first few minutes can help the cheese melt into a thick, viscous consistency without burning the bread.
