Method
- Preheat oven to 450°F (230°C).
- In a large bowl, whisk together flour, baking powder, sugar, and 1 teaspoon salt.
- Stir in the shredded cheddar cheese until coated with flour.
- Pour in cold buttermilk and mix gently with a spatula just until combined and no dry flour remains. Do not overmix.
- In a separate bowl, melt the butter and whisk in minced garlic and remaining 1/2 tsp salt.
- Pour the garlic butter into a 9x9 inch square baking dish.
- Using a spoon or scoop, drop 9 mounds of dough directly onto the butter in the dish.
- Bake for 20-25 minutes until tops are golden brown.
- Remove from oven, sprinkle immediately with fresh parsley. Let cool for 10 minutes before serving.
Notes
If you don't have buttermilk, add 2 tablespoons of vinegar or lemon juice to 2 cups of regular milk and let it sit for 5 minutes.
