Cheesy Garlic Butter Swim Biscuits

Ingredients
  

Dry Ingredients
  • 2.5 cups all-purpose flour
  • 1 tbsp baking powder aluminum-free
  • 1 tbsp white sugar
  • 1 tsp salt
  • 1.5 cups cheddar cheese shredded
Wet Ingredients
  • 2 cups buttermilk cold
Garlic Butter Bath
  • 0.5 cup unsalted butter 1 stick, melted
  • 4 cloves garlic minced
  • 0.5 tsp salt omit if using salted butter
  • 2 tbsp parsley freshly chopped

Method
 

  1. Preheat oven to 450°F (230°C).
  2. In a large bowl, whisk together flour, baking powder, sugar, and 1 teaspoon salt.
  3. Stir in the shredded cheddar cheese until coated with flour.
  4. Pour in cold buttermilk and mix gently with a spatula just until combined and no dry flour remains. Do not overmix.
  5. In a separate bowl, melt the butter and whisk in minced garlic and remaining 1/2 tsp salt.
  6. Pour the garlic butter into a 9x9 inch square baking dish.
  7. Using a spoon or scoop, drop 9 mounds of dough directly onto the butter in the dish.
  8. Bake for 20-25 minutes until tops are golden brown.
  9. Remove from oven, sprinkle immediately with fresh parsley. Let cool for 10 minutes before serving.

Notes

If you don't have buttermilk, add 2 tablespoons of vinegar or lemon juice to 2 cups of regular milk and let it sit for 5 minutes.
