  • 1 tsp Italian seasoning
  • 0.5 tsp paprika
  • 1 tbsp olive oil for searing
  • 1 pinch salt and pepper to taste

  • 1 cup milk whole milk preferred
  • 0.5 cup parmesan cheese grated
  • 1 cup mozzarella cheese shredded, divided
Assembly
  • 4 large flour tortillas burrito size
  • 2 tbsp fresh parsley chopped

Equipment

  • Large skillet
  • Whisk
  • Cutting board
  • Knife

Method

  1. Season chicken cubes with Italian seasoning, paprika, salt, and pepper.
  2. Heat oil in a large skillet over medium-high heat. Cook chicken for 5-6 minutes until golden and cooked through. Remove chicken to a bowl.
  3. In the same skillet, melt butter over medium heat. Add minced garlic and cook for 30 seconds until fragrant.
  4. Whisk in flour and cook for 1 minute to form a roux.
  5. Gradually whisk in milk. Simmer for 2-3 minutes until thickened.
  6. Remove from heat. Stir in parmesan cheese and half of the mozzarella until smooth.
  7. Add the cooked chicken back into the sauce along with parsley. Toss to coat.
  8. Lay out tortillas. Divide the mixture among them, top with remaining mozzarella, and roll tightly.
  9. Wipe the skillet clean or use a fresh pan. Toast the wraps seam-side down over medium heat until golden brown on all sides.
  10. Slice in half and serve hot.

Notes

Ensure tortillas are warm before rolling to prevent cracking.
