Method
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the cold mashed potatoes, beaten egg, 1/2 cup shredded cheese, garlic powder, and parsley.
- Gently mix until just combined. If mixture is too wet, add flour. Season with salt and pepper to taste.
- Scoop about 2 tbsp of the potato mixture. Flatten into a disc in your palm.
- Place one cube of mozzarella or cheddar cheese in the center.
- Fold the potato mixture around the cheese cube and roll into a smooth ball. Ensure cheese is completely sealed.
- Place the puffs on the prepared baking sheet, about 1 inch apart.
- Bake for 20-25 minutes, or until golden brown and crispy. Some cheese may ooze.
- Let cool for 5 minutes before serving. The cheese center will be very hot.
Notes
Using COLD mashed potatoes is essential for this recipe to work. Warm potatoes are too soft and will not hold their shape. An air fryer can also be used at 390°F (195°C) for 10-12 minutes.
