Ingredients
  

Potato Base
  • 3 cups mashed potatoes cold leftover or fresh
  • 2 large eggs beaten
  • 0.33 cup all-purpose flour
  • 1 cup cheddar cheese shredded
  • 0.25 cup sour cream
  • 0.25 cup green onions chopped
  • 1 tsp baking powder
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
Filling & Topping
  • 4 oz mozzarella cheese cut into 12 small cubes
  • 2 tbsp unsalted butter melted
  • 1 tbsp fresh parsley chopped

Equipment

  • Muffin tin (12-cup)
  • Large mixing bowl
  • Whisk

Method
 

  1. Preheat oven to 400°F (200°C). Generously grease a 12-cup muffin tin with cooking spray or butter.
  2. In a large bowl, combine mashed potatoes, eggs, flour, baking powder, sour cream, cheddar cheese, green onions, garlic powder, and onion powder.
  3. Mix until well combined and the batter holds its shape.
  4. Scoop about 2 tablespoons of the mixture into each muffin cup. Create a small well in the center.
  5. Place a cube of mozzarella cheese into each well.
  6. Top with remaining potato mixture to cover the cheese completely. Smooth the tops.
  7. Brush the tops with melted butter.
  8. Bake for 25-30 minutes until puffed and golden brown on top.
  9. Let cool in the pan for 10 minutes to set before removing. Garnish with parsley.

Notes

Cold mashed potatoes are easier to work with than warm ones. If the mixture is too sticky, wet your hands slightly when handling.
