Cheesy Potato Burritos with Crispy Tater Tots

  • 1 lb Ground beef 80/20 preferred
  • 1 packet Taco seasoning approx. 1 oz packet
  • 1/2 cup Water or beef broth
  • 16 oz Frozen tater tots baked extra crispy
  • 1.5 cups Cheddar cheese freshly shredded
  • 4 large Flour tortillas burrito size, warmed
  • 1 tbsp Butter or oil for toasting

  • Air fryer or baking sheet

Method
 

  1. Bake or air fry the frozen tater tots according to package instructions until they are very golden and extra crispy.
  2. In a large skillet over medium-high heat, brown the ground beef, breaking it apart as it cooks. Drain excess fat.
  3. Stir in the taco seasoning and water. Simmer on medium-low for 3-5 minutes until the sauce thickens and coats the meat.
  4. Warm the tortillas in the microwave for 20-30 seconds so they are soft and pliable.
  5. To assemble, place a scoop of the beef mixture in the center of a tortilla. Top with a handful of crispy tater tots and a generous pinch of shredded cheese.
  6. Fold the sides inward, then roll the burrito tightly from the bottom up.
  7. Heat a clean skillet with a little butter or oil over medium heat. Toast the burritos seam-side down for 1-2 minutes until golden, then flip and toast the other side. Serve immediately.

Notes

Freezer Instructions: Allow assembled and toasted burritos to cool completely. Wrap tightly in foil and freeze in a zip-top bag for up to 3 months. Reheat in a 350F oven for 40 minutes.
